Tuna Salad

Tuna Salad

1 5 oz can tuna in water, drained
2 cups chopped fresh spinach
1/3 cup diced onion
1 hard cooked egg
2 tsp mustard
1 Tbsp olive oil

Combine tuna, spinach, egg and onion. Mix together mustard and olive oil then drizzle over salad. Mix thoroughly. Serve as a sandwich with a slice of mozzarella or eat as a salad.
